Salad Bowl

I have leftover food in the fridge I made a salad out of it.

Ingredients:

  • 1/2 cup cooked brown rice
  • 3/4 cup soybeans
  • 1/2 cup grated beetroot
  • 1 cup baby spinach
  • 8 broccoli florets
  • 1 cup roasted chickpeas
  • 8 jackfruits seeds, boiled
  • kalamata olives
  • 1 tablespoon pumpkin seeds

Instructions:

  1. In a flat skillet, I roasted chickpeas in olive oil, cumin powder, salt, chili powder.
  2. Take 2 bowls all the veggies and brown rice mix together in the bowl and on top garnish with pumpkin seed.
