Roasted Sweet Potatoes with Parsley, mint and roasted garlic Dip

For Grilled Sweet Potatoes 


  • 1-1.2 kg sweet potatoes (cut it in rounds)
  • 4 tablespoon olive oil
  • Himalaya pink salt and pepper to taste

For The Topping

  • 1/4 cup olive oil
  • 1 cup roughly chopped mint
  • 1 cup finely chopped parsley
  • 10 roasted garlic cloves, minced
  • 1 long red chilly, finely chopped
  •  pinch of salt


  1. Place the sweet potatoes in the bowl drizzle olive oil on to and sprinkle Himalaya pink salt and pepper and toss well. Keep for 15 minutes a side. Then turn on the griller and place sweet potatoes inside and grill them all and keep it in a serving tray.
  2.  In a bowl mix olive oil, mint, parsley, roasted garlic, red chilly and salt. mix well.
  3. In a serving plate place grilled sweet potatoes and drizzle mint and parsley dip on top. Serve while hot.
