Ingredients:
- 1 cup raw papaya
- 1 cup carrots
- 2 cloves garlic
- 3 Thai red chilies
- 3 tablespoon roasted peanuts
- 1 tablespoon fish sauce
- 1/2 to 1 tablespoon sugar
- 2 lime (I like sour taste)
- 1 -2 tomatoes chopped
- green beans
Instructions:
- After washing the green papaya and carrots, peel off the skin using a peeler. You can then either use a grater to shave the papaya and carrots, or you can use a knife until there are numerous vertical cuts, then shave off the top layer into thin pieces.
- Toast peanuts on the stove on a medium flame until they turn pinkish brown.
- Add garlic cloves, Thai red chilies and pound them for a few seconds until the garlic is crushed and chilies are reduced to small bites. Then add sugar, fish sauce and then squeeze some lime juice and 1-2 lime veggies into the mortar. Mix and pound the dressing, make sure sugar is fully dissolved into a liquid. Add 1 tablespoon of roasted peanuts and then roughly slice in the tomatoes into the mortar. Pound the mixture for about 30 seconds.
- And finally, toss the papaya, carrots, green beans and dressing mixture in a deep big bowl.
- Serve immediately.
