Shrikhand is a made out of hung full-fat yogurt. A dessert which transfigures ordinary curds into a delicacy. Shrikhand is a Gujarati sweet with a creamy texture.
Today is a Holi Festival. For today’s special Holi festival, I made Shrikhand in my menu at home.

Ingredients:
- 1 kg full-fat yogurt
- 3/4 cup powdered sugar
- a few saffron strands
- 1 tablespoon warm milk
- 2 teaspoon cardamom powder
- garnish with pistachio and almond
Instruction:
- Hang the curd in a muslin cloth for 5 hours until all the liquid has drained off.
- Rub the saffron into the warm milk until it dissolves.
- Mix together hung curd, sugar, saffron mixture, and cardamom in a bowl and churn using a hand blender till it became creamy and smooth.
- Garnished with pistachios, almonds and saffron strands.
Variation:
- Shrikhand can be prepared in different flavors like strawberry, mango, mixed berries, custard apple, plain and mixed dried fruit.
