Thai Green Curry With Vegetables And Jasmine Rice

I just love most about Thai green curry is Kaffire lime leaves it’s a beautiful citrusy fragrance. Thai green curry with homemade curry paste. Thai curry dish is made from curry paste, coconut milk, chicken, meat, seafood, vegetables, and herbs. My husband and I love most Thai curries.
Jasmine rice is Excellent texture and a super simple method to cook!!

 

Thai Green Curry

Total Time: 55 minutes
Preparation Time: 30 minutes
Cooking Time: 25 minutes
Serve: 4

For The Green curry paste

Ingredients:

  • 6 Thai green chilies
  • 3 garlic cloves
  • 1 onion
  • 1 piece of galangal
  • 3 cups of coriander
  • 1 kaffir lime peel
  • 2 stalk lemongrass
  • 1 tablespoon white peppercorns
  • 1 teaspoon coriander seeds
  • 1 teaspoon cumin seeds
  • 1 teaspoon mustard seeds
  • salt to taste

Instructions:

  1. Remove the stems of Thai red chili, peel the garlic cloves, roughly chop coriander, delicately slice off all the green bumpy peel from kaffir lime.
  2. Dry roast the cumin seeds, coriander seeds, and mustard seeds for 30 seconds to bring out the good aroma.
  3. All the ingredients mix them together in the grinder and make a paste.

For The Green Curry Paste

Ingredients:

  • Green curry paste
  • 1 cup coconut cream
  • 2 cup coconut milk
  • 8 Thai small eggplant
  • 3/4 cup round baby eggplant
  • 2 carrots diced
  • 1 cup broccoli florets
  • 1 cup mushrooms
  • 8 baby corn
  • 1 cup asparagus, trimmed
  • 8-10 Thai sweet basil
  • 2 red Thai chilies
  • 12-15 kaffir lime leaves
  • 2 tablespoon fish sauce
  • sugar to taste
  • salt to taste

Instructions:

  1. In a pot, green curry paste and all the vegetable sauté for 2-3 minutes and then add kaffir lime leaves broken in half for a citrusy fragrance.
  2. Add coconut milk, coconut cream, salt, fish sauce, sugar and then bring to boil, stirring delicately. At this stage taste your curry and if it needs more salt or sugar than add accordingly.
  3. In 5 minutes it will be ready and last and final step is to toss the Thai sweet basil and turn off the heat.
  4. Serve hot with Jasmine rice.

For Jasmin Rice

Total Time: 18 minutes
Preparation Time: 3 minutes
Cooking Time: 15 minutes
Serve: 4

Ingredients:

  • 2 cups uncooked jasmine rice(Just make sure to use an equal amount of water for 1:1 ratio)
  • 2 cups water

Instructions:

  1. Wash and drain Jasmin rice.
  2. Add the rinsed rice to the pot along with an equal amount of water.
  3. Cook on medium heat on gas for 15 minutes.
  4. Fluff with a fork.
