For Grilled Sweet Potatoes
- 1-1.2 kg sweet potatoes (cut it in rounds)
- 4 tablespoon olive oil
- Himalaya pink salt and pepper to taste
For The Topping
- 1/4 cup olive oil
- 1 cup roughly chopped mint
- 1 cup finely chopped parsley
- 10 roasted garlic cloves, minced
- 1 long red chilly, finely chopped
- pinch of salt
- Place the sweet potatoes in the bowl drizzle olive oil on to and sprinkle Himalaya pink salt and pepper and toss well. Keep for 15 minutes a side. Then turn on the griller and place sweet potatoes inside and grill them all and keep it in a serving tray.
- In a bowl mix olive oil, mint, parsley, roasted garlic, red chilly and salt. mix well.
- In a serving plate place grilled sweet potatoes and drizzle mint and parsley dip on top. Serve while hot.
